Banana Muffins

(Serves a Party of 6)

Waking up and baking is not always something that sounds fun, but when it is, why not get into it with some coffee and morning tunes?

This morning I dove into my banana muffin recipe and the smell of thoose mufins coming out of the morning 100% jumpstarted the rest of my dsy.

Being super tasty and gluten free, they are the perfect candidate for a pleasant breakfast or even a little snack to pack up for lunch.

Ingredients:

  • 2 Cups of Almond Flour
  • 4 Mashed Bananas
  • 1 Cup of Coconut Sugar
  • 1 Cup of Oat Milk
  • 1/4 Cup of Avocado Oil or Melted Plant-Based Butter
  • 1 Flax Egg (3 tbsp of ground flax seed with 1/2 cup of water)
  • 1 Tablespoon of Maple Syrup or Agave Nectar
  • 1 Teaspoon of Baking Soda
  • Few Dashes of Cinnamon and Salt

Preheat the oven to 375 degrees.

After you have mashed your bananas and prepared your flax egg, go ahead and combine all of the ingredients into a large bowl.

When your batter is looking good to go, drop in about 1/4 cup of your mixture into the muffin liner, then bake them for about 25 minutes!
