Serves a Party of 8

Similar to my black bean brownie recipe, these blondies took me by surprise about the fact that there were chickpeas in them, but it also felt great to know that they were a bit better for my body. They turned out with a bit more of a lighter and fluffier dessert than anticipated, but maybe next time I can add in some kind of nut butter to add more of a fudgy texture to them. Regardless, they were a killer time to make and I enjoyed every second of serving them up with fresh organic blackberries and a glass of my favorite local gin.
Chickpeas are a staple ingredient in this recipe, but I also tossed in a bit of cassava flour, organic cane sugar, egg replacement(from Bobs Red Mill), vanilla extract, agave nectar, baking powder, and a pinch of salt blended in a food processor with oat milk to create the perfect batter ready to be baked and beautiful in just 30 minutes.
Ingredients:
- 15 Oz or About 1 and 1/2 Cup of Chickpeas
- 1 Cup of Cassava Flour
- 3/4 Cup of Cane Sugar
- 2 Tablespoons of Bobs Red Mill Egg Replacement(can be substituted for ground flaxseed)
- 1 and 1/2 Cup of Oat Milk
- 1 Tablespoon of Agave Nectar
- 1 Tablespoon of Vanilla Extract
- 1 Tablespoon of Avocado Oil
- 1 Teaspoon of Baking Powder
- Pinch of Salt
- 1 Cup of Blackberries(or maybe some of your favorite berries if blackberries aren’t your thing)
Start off by adding the 15 oz of chickpeas, vanilla extract, agave nectar, and oat milk to a high speed blender or food processor, then pulse until your mixture is super creamy and pourable and set aside(add more milk if it is too thick).
In a large mixing bowl, mix together the cassava flour, cane sugar, and baking powder.
Create the egg replacement with a few tablespoons of water or as directed on the Bobs Red Mills package, if you are using ground flaxseed, simply stir it around with at least 1/4 cup of water until it becomes thick, then add it into your large mixing bowl.
Next, fold in the blended chickpea mixture and give it all one last good stir(avoid over mixing).
In a 9 by 9 baking pan or casserole dish, lay down a few drops of oil, or line the pan with parchment paper and drop down your batter.
After you have spread the batter to be flat and even, pop that guy in the oven and bake for 30 minutes or until you see the top turn golden-brown(see pictures above).
I love to serve them warm, so cut them as you please, plate them with your favorite berries, and if you’re feelin’ frisky, make yourself a lil cocktail to end the night with a bang.
