I’m not typically a huge fan of oatmeal in the morning, but I always love how easy it is to customize it with your favorite toppings and flavors.
For this dish I used steel cut oats, which are incredibly fulfilling and packed with protein, fiber, and other spectular nutrients that will give you tons of energy.
To make them taste super sweet without adding too many sugars, I simply boiled them in vanilla oat milk with a few sprinkles of cinnamon and agave nectar. In case you’re not familiar with agave nectar, it is very similar to maple syrup, only it is low glycemic meaning it is better for your blood sugar balance.
Topped with a bit of hemp hearts and pecans to add more protein and healthy fats – followed by sliced mangos, chocolate chips, chia seeds, and a small drizzle of sunflower butter, I bet you will LOVE how this turns out.
Ingredients:
- 1 Cup of Steel Cut Oats
- 2 and 1/2 Cups of Vanilla Oat Milk
- 1 Teaspoon of Cinnamon
- 1 Tablespoon of Agave Nectar
- 2 Cups of Sliced Mango
- 1/2 Cup of Chocolate Chips
- 1/2 Cup of Hemp Hearts
- 1/4 Cup of Crushed Pecans
- 1/2 Cup of Sunflower Butter
- 2 Teaspoons of Chia Seeds
In a medium sized pot, begin to boil the oat milk, oats, cinnamon, and agave nectar – stirring occasionally.
When fully cooked and tender, place them in a decent sized bowl and add on your sliced mangoes, chocolate chips, hemp hearts, pecans, sunflower butter, and chia seeds!
With this being one of the easier meals to prepare, in no time you will be dressing it up with any fruit, berries, and toppings of your desire.
