(Serves a Party of 4)

I’m not usually a huge salad guy, but it is definitely that one kind of lunch we can all create to satisfy our taste buds by any means necessary.
This time around I decided to make a big fat and loaded salad with fresh green kale, arugula, sliced strawberries, edamame, slivered almonds, and a sprinkle of hemp hearts all accompanied by my homemade grapefruit vinaigrette.
Sounds like a lot, but my goodness did it turn out refreshing and outrageously fulfilling!

Ingredients:
- 4 Cups of Chopped Kale
- 4 Cups of Arugula
- 1 Cup of Sliced Strawberries
- 1 Cup of Cooked Edamame
- 1/2 Cup of Slivered Almonds
- 1/2 Cup of Hemp Hearts
Ingredients for the Grapefruit Vinaigrette:
- 1 Cup of Freshly Squeezed Grapefruit Juice (or 2 grapefruits)
- 1 Tablespoon of Dijon Mustard
- 1 Tablespoon Agave Nectar
- 1 Tablespoon of Olive Oil
- Dash of Salt and Pepper
For the salad, combine all of the ingredients in a large bowl and give it a good mix.
To make the dressing, simply whisk around all of the vinaigrette ingredients until they are fully blended together!
