Peach Cobbler

Peach season is just 2 months away, which means warmer weather, longer days, and more peach cobbler.

It’s a very new dessert to me, as I only had it for the first time a few weeks ago. It was one of those boxed peach cobbler mixes where all you have to do is add milk or water and a can of peaches over some melted butter, then bake it for up to 45 minutes. Let me just tell you, I ate the entire dang thing in one sitting and felt no shame at all.

I knew I wanted to make it myself eventually, so here I am, sharing my plant-based version of it using a few unique and healthier ingredients like freshly sliced peaches, cassava flour, coconut sugar, flaxseed meal, cinnamon, baking powder, Chobani oat milk(or any non-dairy milk), and vegan butter.

One thing that blew my mind when I made it out of the box was how the flour literally formed a crust over the peaches, so immediately I knew this could be the challenging part. My batter didn’t exact rise totally over the peaches, but I think it was still just as good and tasty. This recipe has me super excited to prepare for summer parties since it serves a party of 8, and by then the peaches will be beautiful and thriving.





Ingredients:

  • 1 and 1/2 Cups of Cassava Flour
  • 1 Cup of Coconut Sugar (plus about 1/2 cup more for peach mixture)
  • 1/4 Cup of Flaxseed Meal
  • 1 Teaspoon of Cinnamon
  • 1 Teaspoon of Baking Powder
  • 2 Cups of Plain Oat Milk
  • 4 Tablespoons of Vegan Butter (I use the brand called Earth Balance)
  • 2 Cups of Sliced Peaches
  • 1/4 Cup of Lemon Juice or 2 Squeezed Lemons

Preheat the oven to 350 degrees.

In a large bowl, whisk together the cassava flour, coconut sugar, flaxseed meal, cinnamon, and baking powder.

Pour in the oat milk and stir(I used a for for the part).

Next, heat up the lemon juice on medium heat in a medium sized pot.

Add in the 1/2 cup of coconut sugar and the 2 cups of sliced peaches.

When you see the mixture begin to steam, stir and cover for about 10 minutes.

Finally, grab a 9 by 13 baking pan and drop down the melted vegan butter, followed by the batter, then the peach mixture.

The best part is, you don’t even have to stir after you put the peach mixture on top, simply pop that sucker in the oven and bake for up to 45 minutes. You’ll start to see the edges get a lil crispy, that’s how you know it is just about good to go.
