Roasted Asparagus

Asparagus has always been the vegetable that I cannot leave the grocery store without. I find that many people aren’t a huge fan due to its unique flavor, aroma, and texture – but I swear if you make it right you could perhaps acquire a new craving for it.

This time around I roasted the asparagus up with sliced bell peppers, slivered almonds, garlic powder, dried thyme, dried basil, a few pinches of sea salt and a drizzle of olive oil. For me, I eat this dish all year round – but I think it goes perfectly around the holidays as it easily brightens up the dining table and makes for the perfect crunch as a side item.

Whether you are hosting a get together or need an idea of what to bring to a festive feast, it is an incredible recipe to keep in mind since it only takes about 20 minutes!



Ingredients:

  • 1 Bunch of Asparagus
  • 1 Sliced Yellow Bell Pepper
  • 1 Sliced Red Bell Pepper
  • 1/2 Cup of Slivered Almonds
  • 1 Teaspoon of Garlic Powder
  • 1 Teaspoon of Dried Thyme
  • 1 Teaspoon of Dried Basil
  • Few Pinches of Salt (to taste)

First, preheat the oven to 400 degrees.

Chop the whiter ends of the asparagus off by an inch or two.

In a casserole dish or even a large baking sheet, throw on all of the ingredients aside from the olive oil.

Finally, drizzle on the olive oil and get your hands dirty by giving it all a good mix – then bake in the oven for around 15 minutes.

If you’d prefer to have the asparagus a bit more smoky – leave it in for another 5 minutes or so. Otherwise, dig in and enjoy!
