Before I was familiar with the plant-based diet I always enjoyed making tuna sandwiches – and although this recipe tastes nothing like it, the texture is almost a perfect fit for a unique and healthier alternative.
Using soaked sunflower seeds as the base, these suckers are packed with healthy fats, a good amount of protein, a whole bunch of Vitamin E to assist in brain function, Magnesium for muscle recovery, Selenium which is crucial for sustainable energy, and even a bit of Zinc to help boost the immune system.
There are all kinds of ways to incorporate these glorious seeds into your diet but making these sandwiches has to be my favorite. Just like my chickpea salad recipe, they are easy to pack up for lunch on those long days spent outdoors to give the body a bit of nourishment to keep you going.
Topped with yellow mustard, shaved carrots, spinach, and sliced cucumbers I can guarantee you will find yourself crushing these sandwiches on the daily.
Ingredients:
- 1 Cup of Raw Sunflower Seeds (soaked in water for 24 hours)
- 3/4 Cup of Plant-Based Mayonnaise (store bought or homemade)
- 1/2 Teaspoon of Smoked Paprika
- Few Dashes of Salt and Pepper (to taste)
- Handful of Spinach
- 1 Shaved Carrot
- 1/2 Sliced Cucumber
- Drizzle of Yellow Mustard
Ingredients for Homemade Mayonnaise:
- 1 Cup of Avocado Oil
- 1/2 Cup of Chobani Extra Creamy Oat Milk
- 2 and 1/2 Teaspoons of Apple Cider Vinegar
- Few Dashes of Salt (to taste)
Begin with making the mayo by pulsing together the avocado oil, oat milk, apple cider vinegar, and salt until you have a completely creamy mixture.
Add in the soaked sunflower seeds followed by the paprika and a pinch of salt and pepper, then carefully pulse the mixture one last time just enough to leave the sunflower seeds slightly shredded up.
Spread the sunflower mixture onto the Dave’s Killer Bread, drizzle on your mustard, then top with the shaved carrot, spinach, and sliced cucumber.
Slice the sandwiches into shapes of your deepest desire and be ready to indulge one of the most smokey and eccentric lunches your taste buds have ever experienced!
