Sunflower Wraps

I’ve spent the past 4 straight days battling a nasty respiratory infection and knew it was time to overload my body with this veggie packed sunflower wrap made with soaked and shredded sunflower seeds, collard greens, red cabbage, shaved carrots, and sliced avocado to be paired with a nice side of diced pineapple, terra chips, and a chocolate probiotic shake using Orgain protein powder, frozen banana, peanut butter, and water.

The shredded sunflower mixture is made by first soaking raw sunflower seeds in water(preferably in a closed mason jar) for up to 24 hours. This ensures your shredded mixture won’t be too crunchy, but instead super smooth and tasty.

I shredded the seeds in a blender along with vegan mayonnaise, olive oil, paprika, coriander, olive oil, salt and pepper.

These kind of lunches are what my body fully thrives on, providing me with a ridiculous amount of energy and fuel to beat the ass of the random virus that has taken over and had left me feeling defeated.

Finally feeling better, I couldn’t be happier to share this rejuvenating lunch with you guys. The shredded sunflower mixture is something I discovered a little over a year ago, and has been a complete game changer in the plant-based world. It has a similar texture to tuna fish, but tastes wayyy better and makes for a perfectly light and refreshing meal to eat with your favorite side of fruit and lunch time beverage.





Ingredients:

  • 4 Collard Green Leaves
  • 2 Cups of Raw Sunflower Seeds
  • 1/2 Cup of Mayonnaise
  • 1 Tablespoon of Olive Oil
  • 1 Teaspoon of Paprika
  • 1 Teaspoon of Coriander
  • 1 Teaspoon of Sea Salt
  • 1/2 Teaspoon of Black Pepper
  • 1/2 Cup of Chopped Red Cabbage
  • 1/2 Cup of Shaved Carrots
  • 1 Sliced Avocado
  • Terra Chips (optional)
  • Side of Pineapple (or your favorite fruit)

Ensure you have soaked the sunflower seeds in water for at least 20 hours.

Add the sunflower seeds to a blender along with the Mayo, olive oil, paprika, coriander, salt, and pepper. Pulse until the mixture is still a bit chunky.

Drop down the shredded mixture onto a collard green, followed by the shaved carrots, cabbage, and avocado.

Fold the wrap just you would a burrito – started off by folding in the sides, then fold the bottom into the top.

Carefully chop the wrap in half, plate the terra chips, and finally your favorite side of fruit.


Ingredients for the Chocolate Shake:

  • 1 Frozen Banana
  • 2 Scoops of Orgain Probiotic Chocolate Protein Powder
  • 2 Tablespoons of Peanut Butter
  • Handful of Ice Cubes
  • 2 Cups of Water

Blend all ingredients until fully creamy.
