Sweet potatoes are one of my favorite things in the world to eat, so when I first discovered that these brownies were a thing I was so excited to dive into the kitchen to recreate them in my own fun and delicious way.
We all love dessert so much, but sometimes it can feel so guilty when we know it is not typically good for us. Luckily these come out with a subtle and sweet taste without being loaded up with processed sugars and fats.

Ingredients:
- 4 Peeled, Diced, and Boiled Sweet Potatoes
- 1/2 Cup of Sunflower Butter (peanut and almond butter work as well)
- 2 Tablespoons of Avocado Oil
- 1 Teaspoon of Vanilla Extract
- 1 and 1/2 Cups of Oat Flour
- 3/4 Cup of Unsweetened Cacao Powder
- 1/2 Teaspoon of Baking Soda
- Few Pinches of Salt
- 1/2 Cup of Enjoy Life Chocolate Chips
Preheat the oven to 375 degrees, then in a large mixing bowl mash up the boiled and peeled sweet potatoes, sunflower butter, avocado oil, and vanilla extract.
Add in the flour, cacao powder, baking soda, and pinch of salt and mix it up one last time.
In a 9 by 9 baking pan – line the bottom and sides with a tiny bit of oil, then fold in your batter and bake it for about 30 minutes.
Let it cool down for about 10 minutes, then get ready to plate it up!
