Yogurt Bowls

It feels incredible to break away from the more intricate recipes that I prepare on the daily to make something quick, healthy and delicious before a busy day ahead.

This past Saturday I was slammed with a spontaneous cleaning spree, plus a long hike with the dogs, so before I got to it, I put together this bowl in less than 40 minutes. The only reason it even took that long was because I decided to make a homemade granola to use for the yogurt bowl AND to have as a snack for my hike.

I made the granola by mixing together rolled oats, pumpkin seeds, cinnamon, maple syrup, and water that were prepared and baked in the oven at 300 degrees for 30 minutes.

After they were fully baked, all that was left to do was plate the bowls by dropping down the yogurt as the base, lay down the freshly baked granola, some sliced strawberries, cacao nibs, hemp seeds, pecans, and a bit of chocolate date syrup.

Ingredients:

These ingredients are per serving, so simply double or triple the ingredients depending on how many servings you are putting together.

Ingredients for the Granola:

Begin making these yogurt bowls by prepping and baking the granola.

Preheat the oven to 300 degrees while you gather your ingredients.

In a large bowl, mix together the oats, pumpkin seeds, and cinnamon.

Stir in the maple syrup and water.

On a baking sheet, lay down some parchment paper if you’re tryna keep it oil free, otherwise you can spread out a tablespoon of oil. If I had to recommend the type, I’d say to go for avocado oil from Primal Kitchen.

Bake the granola for 30 minutes, ensuring that you stir the granola every 10 minutes or so.

Let the granola cool to allow it to become crunchy.

Drop down the yogurt, followed by the granola, strawberries, cacao nibs, hemp hearts, and pecans. Top them on in any shape, form, or order your heart desires.

Finally, lightly drizzle down the chocolate date syrup.

The date syrup is totally optional, but as I said above, that stuff is the real deal. And if you’re not a big fan of strawberries or the toppings I used, drop down your own personal favorites!
